Rise and shine! As a mom of two kids, my day begins with the delightful chaos of morning routines. Mornings are a whirlwind of activity—making breakfast, packing lunches, finding missing cardigans, and rushing to not be late (for the second day in a row…)
Throughout the day, I wear many hats—a chef, a cheerleader, a home organizer, a writer...the list goes on. Here’s a little post on 20 things about me incase you missed it.
Join me as we journey through a day in my life, exploring the meals I create to keep my family healthy and happy AND myself functioning on broken sleep. From quick breakfast fixes to dinners that need to be both tasty and nutritious, my kitchen is a haven of culinary experiments and a playground for flavors.
These have so far gone down well, my Strawberry Brekkie Muffins and these Fish Tacos which my daughter eats! Win.
Breakfast: Quick and Energizing
My day starts early. A power-packed breakfast is a must to keep up with my little ones and the demands of work.
Smoothie Bowl:
Blend frozen berries, a banana, spinach or kale, Greek yogurt, and a splash of milk or juice.
Top with granola, nuts, seeds, and a drizzle of honey.
Whole Grain Toast with Peanut Butter:
Spread peanut butter on whole grain toast.
Serve with a side of sliced fruits like apples or bananas.
Coffee or Tea:
A cup of your preferred morning beverage to kickstart your day. Mine is a turmeric ginger cleanser with a little honey.
Mid-Morning Snack: Quick and Filling
After my workout, I fuel up for that extra energy kick.
Greek Yogurt Parfait:
Layer Greek yogurt with granola and fresh berries or any fruits of your choice.
Handful of Nuts with Dates & Savoury Popcorn
Apple Slices with Peanut Butter
Lunch: Healthy and Satisfying
Grilled Chicken Salad:
Grilled chicken breast on a bed of mixed greens (lettuce, spinach, rocket).
Add cherry tomatoes, cucumbers, and a sprinkle of feta cheese.
Dress with a light vinaigrette.
An egg on top for a protein boost!
Whole Grain Roll:
Serve with a side of hummus or favorite dip.
A quick meet-up with friends during lunch on call or popping out helps me recharge mentally and emotionally, reminding me of the importance of balance amidst a busy schedule.
Afternoon Snack: Energizing and Quick
Almonds and Fruit:
A handful of almonds and a piece of fruit like an apple or a banana.
Dinner: Nutritious and Family-Friendly
Vegetarian Stir-Fry:
Sauté a mix of colorful vegetables (peppers, broccoli, snap peas, carrots) in a stir-fry sauce.
Serve over quinoa or brown rice.
Baked Salmon or Chicken:
Season with your favorite herbs and bake in the oven.
Serve with steamed vegetables or a simple salad.
Evening Snack: Light and Satisfying
In the evening, I unwind by either scrolling through reels for culinary inspiration or experimenting with a new recipe, indulging my passion for cooking. Writing lists or ideas.
Yogurt and Berries:
Greek yogurt topped with a handful of fresh berries and granola.
Half a sandwich: with turkey, lettuce or ham
Hydration: Throughout the Day
Drinking plenty of water throughout the day to stay hydrated.
The key is to choose nutrient-rich foods, is plan ahead as much as possible, and make healthy choices that fit into your busy schedule.
