Sweet Chilli Chicken
Introducing a dish that never fails to delight both my family and friends: Sweet Chili Chicken. This delightful concoction of flavors has been a favorite in our household for years, and today, I'm excited to share it with all of you. The harmonious blend of sweet and spicy notes, combined with tender chicken, makes it a true crowd-pleaser. You can use chicken thighs and I have added pak choi but other vegetables could work.
Ingredients
1 whole chicken, spatchcocked
Marinade:
2 tbsp light soy sauce
4 tbsp sweet chilli sauce
1 tbsp honey
1 tbsp ginger, grated
1 tsp five spice powder
1 tbsp sesame oil
5 spring onions, chopped
2 heads of pakchoi, chopped
Sesame oil
Get Cooking!
Preheat the oven to 180c/Gas 6
Firstly in a bowl whisk all the marinade ingredients together. Pour over the chicken liberally covering all of it. Set aside.
In a large baking tray add in the chopped spring onions, pak choi and any other spring greens you might want to add. Drizzle over some seasame oil, mix well.
Place the spatchcock chicken over the veggies and pop in the oven. Roast the chicken for 35-40 mins on a baking tray, mix the veggies well. Take out and leave to rest for five minutes before serving with fluffy white rice.
