I’m currently sitting under an 11lb baby comfortably snoozing away. Dinner is due in an hour. If i move him it could disturb his sleep. The all important afternoon nap…parents will be able to relate. Tonight I fancied eating a curry, chicken thighs cooked slowly in a sauce that can be lovingly mopped up with rotis or buttery rice. It’s either that or a traybake! Which has been the daily routine since baby.
I have a go to recipe that I’ve been making for a while now, that’s easy, has a handful of ingredients and delivers flavour punches all the time.
What you need is a SOLID curry powder, whether it’s the same one you’ve used many times before, your own homemade version (I’m impressed if you do) or a reliable shop bought one. It’s all good in my book.
CHICKEN CURRY IN A HURRY
For about 4 hungry people or 2 in our case
12 chicken thighs, bone in
1 can of plum tomatoes, the best quality you can find
2 tbsp curry powder
2 tbsp ghee or oil
1 onion, chopped finely
4 garlic cloves, chopped
2 inch piece ginger, chopped finely
1 tsp thyme, 4 cardamom pods, 2 bay leaves (add aromatics if you have but not essential)
1 cup of frozen peas
salt and pepper to taste, rice or rotis to serve
Firstly in a deep saucepan, add in the ghee or oil and throw in the onions, let these sweat down on a low heat until translucent, then genlty increase the heat and add in the garlic and ginger.
Mix well, don’t let them burn.
Add in the any aromatics like cardamom pods, bay leaves, curry leaves, thyme if you have.
Then in goes all the tomatoes to make a sauce, combine well and add 1 tsp salt. Let this cook for 5 minutes while stirring.
Then in a bowl make a paste with the curry powder and add this into the tomatoes. Keep stirring for a minute or so ensuring not to burn the sauce.
Tip in the chicken pieces and mix until covered well in the sauce, let this cook for a few minutes. Add about a cup full of water until just under level of the chicken and cover to cook for around 30-40 minutes until chicken is nearly cooked. In the last five minutes add in the frozen peas.
When it it done, check for seasoning. Serve it up and eat!
You can garnish with coriander, chillies or chopped herbs if you like.
